Sweet Potato and Apple Soup

This sweet and creamy soup is the perfect comfort food when you're warming up on a cold day!

Ingredients: 

  • 4 tbsp butter
  • 2 medium yellow onions chopped
  • 1.5 tsp cinnamon
  • 1.5 tsp nutmeg
  • 3 carrots, sliced
  • 2 medium sweet potatoes, cubed
  • 8 cups low sodium chicken broth
  • 1/2 tsp salt
  • 1 Apple, peeled and chopped
  • 2 tbsp honey

Preparation: 

  1. On medium heat, melt butter in large pot.

  2. Add onions and cook 10 minutes until translucent.

  3. Add cinnamon and nutmeg and cook for 1 more minute.

  4. Add carrots, sweet potato, chicken broth and salt.

  5. Bring to a boil, then cover and simmer for about 25 minutes.

  6. Stir in apples and honey.

  7. Purée with a hand mixer until smooth and creamy!
