- 4 tbsp butter
- 2 medium yellow onions chopped
- 1.5 tsp cinnamon
- 1.5 tsp nutmeg
- 3 carrots, sliced
- 2 medium sweet potatoes, cubed
- 8 cups low sodium chicken broth
- 1/2 tsp salt
- 1 Apple, peeled and chopped
- 2 tbsp honey
On medium heat, melt butter in large pot.
Add onions and cook 10 minutes until translucent.
Add cinnamon and nutmeg and cook for 1 more minute.
Add carrots, sweet potato, chicken broth and salt.
Bring to a boil, then cover and simmer for about 25 minutes.
Stir in apples and honey.
Purée with a hand mixer until smooth and creamy!
